Frozen Strawberry or Raspberry Mousse
This may not be ice cream, but it will make you a star and nobody will every guess how easy it was to make!

1 (10 oz.) box frozen berries in syrup, thawed but cold
1/2 c. sugar
2 egg whites
1 Tbsp. lemon juice
dash of salt
1 cup heavy cream, whipped or 1 container of Cool Whip
1/2 Tbsp. almond extract or 2 Tbsp. Kirsch
candied violets, optional

Place strawberries, sugar, egg whites, lemon juice, and salt in a large mixing bowl. Beat 15 to 20 minutes in mixer, until stiff. Stir in flavoring. Fold whipped cream or Cool Whip into the strawberry mixture. Place in a 6 to 8 cup serving bowl or souffle dish. Garnish with whipped cream rosettes and/or candied flowers. Freeze, then cover.

To serve: Remove from freezer and place in refrigerator 10 minutes before serving. You can "gild the lily" with sliced, fresh berries on the side of each serving.

This should serve about 15 people.
