Slow Cooker Pulled Pork BBQ

The First Assistant Pastry Chef, i.e. Cookie Lady's daughter, Paige, has wonderful friends who are lovely, talented, busy women. The Cookie Lady was lucky to corner good friend Caren Friedman at our last visit to the Great North for her recipe for her famous Slow Cooker Pulled Pork BBQ.

This dish makes a great family meal or perhaps even a Memorial Day treat. Please read the entire recipe before you start.

Place

  • 3 lbs. fresh port shoulder, well trimmed

into a slow cooker.

Combine:

  • 3 Tbsp. McCormick Grill Mates BBQ Seasoning
  • ½ c. ketchup
  • ½ c. cider vinegar
  • ¼ c. firmly packed brown sugar
  • 2 tsp. Worcestershire sauce
  • 1 tsp. ground mustard (Caren uses McCormick brand)

Pour this mixture over the pork. Cover the slow cooker. Cook the pork for 8 hours on low or 4 hours on high. Remove the pork from the slow cooker and shred the pork using two forks. Return shredded meat to the cooker. Mix with the sauce and heat before serving.

Serve on sandwich rolls, if desired. Makes 6 to 8 ½ c. servings.

Notes:

  1. For best results, do not remove cooker cover during cooking.
  2. For spicy pulled pork, add ½ tsp. McCormick Crushed Red Pepper to the seasoning mixture.
