Peanut Soup
Using everykid's perennial favorite, peanut butter, and combining it with bone building calcium into a warm, tasty comfort food--great for days when the braces have just been "tightened." You'll note that the pb is the creamy kind, ie: kind to braces.
2 stalks
celery, chopped fine
1 small onion, chopped fine
4 Tbsp. butter
2 Tbsp. flour
2 c. chicken broth
1 c. milk
1 c. light cream or evaporated skim milk
1 c. smooth peanut butter
salt and fresh ground pepper
paprika
In a large saucepan, melt butter and cook celery and onion until lightly brown. Stir in flour and cook, stirring 2 to 3 minutes. Stir in the broth, keep stirring to break up lumps. Cook until the soup boils and thickens. Add milk, cream, and peanut butter, simmer 5 minutes. Add salt and pepper to taste. Sprinkle with paprika and serve.
