New York Crumb Cake

The holidays are here and company is on the way! Crumb cake is a wonderful, EASY way to welcome everyone. There are tons of recipes for crumb cake. We love the two that you will find here, this one, from Foster's Market in Durham, North Carolina, and the other crumb cake recipe from baking guru, Nick Malgieri.

Preheat oven to 350°, spray a "quarter sheet" pan (a 9" x 12" x 1" pan) with vegetable spray or line with the new easy release metal foil or parchment paper and spray that. Set aside.

Topping
2 sticks butter (not margarine) melted and cooled slightly
2 1/2 c. flour
1 c light brown sugar, packed
1 1/2 tsp. cinnamon
1 tsp. vanilla

Mix together with a spatula and finish with your hands, mixing up from the bottom to break up big lumps.

Cake
1 1/2 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt

Sift together onto a sheet of waxed paper. Set aside.

1 large egg
1/2 c. milk
2 Tbsp. canola oil
2 tsp. vanilla

Whisk together and then combine with dry ingredients. Pour batter into the prepared pan. Spread the topping over the top evenly. It may seem like it's too much, but it's not.

Bake at 350° for 20 to 25 minutes. Rotate the pan halfway through. Dust cake with confectioners' sugar. If you have lined the pan, you can remove the cake from the pan and slide it off the liner and cut it easily into squares with a serrated knife when it has cooled.
