Marinated Shrimp
Way back in the early 1970's (the last Century!), The Cookie Lady joined a group of young women in the Organization for Rehabilitation and Training, a.k.a. ORT. One of the ways we earned tons of money for the charity, which supports trade schools all over the world, was to create a useful cookbook made up of recipes from our friends, relatives, and even a few famous people.
The following recipe came from my friend, Bobbi Cohen, a fabulous cook and party giver who could tell you every ingredient in anything she tasted. Sadly, Bobbi is gone, but I often think lovingly of her and of her great taste in food. This recipe is unbelievably easy, and perfect for those late August get-togethers with friends.
Prepare the shrimp
Combine the following ingredients
- 3 lbs. cooked shrimp
- 1 pint Kraft Miracle Whip
- juice of 1½ lemons
- ½ Bermuda onion (or other sweet onion), sliced very thin
in a large container or a large bowl, cover tightly. Allow to marinate 24 to 48 hours. Serve in a pretty bowl with party rye and pumpernickel bread.
Serves: a party crowd!
Note: For people with braces, it might be helpful to cut the shrimp into smaller pieces for easier eating.
