Len's Kigel
The original version of this recipe appeared in the Jewish Exponent, a little newspaper that features stories about Jewish life in the Philadelphia area.

The Cookie Lady is always thrilled to find a really delicious and oh soooo simple recipe. Len's Kigel fills the bill and makes everybody happy, especially the cook.

There is no more comforting food in the world than a sweet kigel (you may call it kugel). Enjoy!

Please read the entire recipe all the way through before you start.

Combine in a large bowl:

  • ½ lb. unsalted butter, melted
  • ½ lb.cream cheese, at room temperature

Add:

  • 5 large eggs
  • 16 oz. sour cream
  • 1½ c. sugar (you may reduce sugar by ¼ c. if you prefer less sweetness)
  • 2 tsp. vanilla extract
  • ½ tsp. salt

When the ingredients are well mixed, add 1 lb. medium noodles, UNCOOKED. Stir the noodles in by hand. Cover and refrigerate overnight.

Next day, preheat the oven to 350°, pour mixture into a 9" x 13" pan sprayed well with a nonstick cooking spray such as PAM.

Top kigel with:

  • 1, 12-oz. jar apricot jam
  • dusting of a mixture of cinnamon and sugar

Bake at 350° for 1 hour.

Serves a hungry family with enough for leftovers.
