Super Simple "Home Made" Chicken
Okay, the holidays are over, the house has to be put back together and the family still expects a great dinner. Well, the Cookie Lady is still putting the cookie cutters away, so I went looking for an easy, quick dinner...and here it is. I hope you like it.
Sauce
- medium to large onion, sliced thin
- 3 cloves fresh garlic, smashed to pulp
- 3 Tbsp. extra virgin olive oil
Cook the onion and garlic until the onion softens and turns translucent. Push the onion and garlic to the side of the pan.
Add
Stir into mixture, and let it bubble up for 1 minute. The sugar will melt first, then bubble.
Add
- 1 can stewed tomatoes
- 2 bay leaves
- Fresh ground pepper to taste
- 2 Tbsp. Worcestershire sauce
- 1/2 c. wine (red or white) or chicken broth
Assemble dish
Place in pan with
- 1 Rotisserie chicken, cut into eighths
Cover loosely and bake for 25 minutes at 350°. Uncover for an additional 10 minutes. Remove the bay leaves before serving. Serve with rice, noodles or even polenta.
Note: If the braces-wearing patient in your life needs a little extra protein (a good idea after an office visit) just sprinkle some cheese on top of the chicken for that last ten minutes.
