"Fancy" Luncheon Salad
Don't you just love those gorgeous salads "ladies who lunch" have in those charming restaurants in Bucks Count (PA, for those of you outlanders)? You can do those fabulous salads with practically no effort.
The following was a hit on a summer day when I thought I had nothing for my husband's lunch. Oh yes, he comes home for lunch everyday!
Assemble the Salad
- 1 cup prewashed salad greens (I used romaine lettuce, but any dark green lettuce is fine)
- 3 or 4 pieces of pineapple (from a container of fruit salad from the Whole Foods Market)
- 2 or 3 pieces of any melon (watermelon is great!)
- ¼ c. cheese
I used Queso Fresco because I keep it in the house in case some Venezuelans show up. Feta cheese, ricotta salata, even Jarlsberg will work. Just crumble or chop it up.
Now here's the trick. Top the salad base with the following
- Leftovers - anything will work, chicken, salmon, even cold steak (if you eat meat) sliced or crumbled over the salad.
- Handful of sliced almonds or chopped pecans
- 2 Tbsp. of a simple vinaigrette
Notes: Any fruit will work, just cut fruit into small chunks. The leftover meat or fish can be warmed in the microwave then placed on the salad. It makes a nice contrast to the cold fruit, lettuce, and cheese.
Serves 1 hungry orthodontist.
