Eggs in Tomato Sauce
Breakfast for dinner is a very popular notion. When you have had your braces adjusted, eggs for dinner isn't just a high-protein whim, it's a stroke of genius. This month's submission from the Cookie Lady can go from a simple idea to a full on recipe depending on your time and tastes.

Please read the entire recipe before you start.

In a 10 inch skillet combine:

  • 1 can stewed tomatoes, chopped into small pieces
  • 1 8 oz. can tomato sauce
  • 1 clove garlic - either left whole so that it can be removed, or minced to be incorporated into the sauce
  • 1 bay leaf
  • pepper to taste

Bring to a boil. Reduce heat to medium low. Cover and simmer 5 to 10 minutes. Discard the bay leaf (and the whole clove of garlic).

Stir into the sauce:

  • 1 c. frozen peas

Into a small dish, one at a time, break

  • 4 large or extra large eggs

Slide each egg, one by one, into the simmering sauce. Sprinkle with freshly grated Parmesan cheese. Cover and simmer until the eggs are set, 5 to 10 minutes.

Serve over a sliced corn muffin or soft polenta.

Notes:

  1. To save time and effort, you could substitute your favorite jar of pasta sauce for the homemade version here.
  2. You may want to add cut up Italian sweet sausages or sausage that has been removed from the casing and browned. You could use pre-cooked sausages cut into matchstick pieces.
  3. This high protein dish is great for as a post-adjustment meal. To add even more protein, add some chopped ham to the final step.
